This coffee is naturally processed, meaning that mature cherries are gathered and then left to rest in a water-filled reservoir for 8 hours, during which imperfect beans are sifted out. Intact cherries are then dried on raised beds without washing or hulling. The slow drying process takes 20 days under low temperatures until the coffee attains 11% humidity.
